Recipe | French Onion Potato Bake
This recipe for French Onion Potato Bake has been a family favourite since I was first introduced to it when I was eighteen.
We often have it as a side dish to another casserole, or as an accompaniment to corned beef or a nice steak - yum!
French Onion Potato Bake
Ingredients:
Potatoes, either thinly sliced or diced - enough to serve your family, I use 4 large potatoes for 3 adults1 packet dry French Onion soup mix
600ml thickened or whipping cream
1 cup cheese, grated
Method:
Preheat oven to 180C. Place potatoes in cold water and bring to boil, then reduce heat and simmer until cooked through. Drain potatoes and place in a casserole dish. Mix FO soup mix and cream together, mix in 1/2 the cheese if you desire. Pour over the potatoes. Sprinkle with remaining cheese. Place in preheated oven for 25 to 30 minutes until cheese is golden brown.
Variations:
- Add cooked pumpkin, butternut squash or sweet potato, either sliced or diced to match the rest of the potatoes.
- Add sliced or diced onion or leek.
Something else I like to do with this recipe is to cook up some diced chicken in a frypan and boil some mixed vegetables until they're softened.
Add both the chicken and vegetables to a casserole dish, then pour over the sauce as per the above instructions, sprinkle with cheese and bake for 20 to 30 minutes. Serve this with cooked rice.
