Recipe | Apricot Chicken Casserole

This Apricot Chicken Casserole is a recipe my mum used to make when my brothers and I were kids and it has remained a firm family favourite. 

I'm not sure where she got the recipe from, it may have been from the back of a tin of nectar or the french onion soup packet, but it's delicious where ever she found it.

We serve the apricot chicken casserole with a side of rice and maybe some beans - sometimes with mixed vegetables added into the casserole as well. A delicious meal to please the whole family.




Apricot Chicken Casserole

Ingredients:

1.5 kg Chicken Breasts, diced OR similar quantity of Chicken Drumsticks
1 onion, diced
1 Tbs Flour
405ml tin Apricot Nectar
1 Sachet French Onion Soup Mix
1/4 to 1/2 cup water, if desired - to increase the amount of sauce

Method:

Preheat oven to 180C. Place chicken and diced onion in a casserole dish and dust with flour. Place apricot nectar and french onion soup mix in a saucepan and simmer until thickened slightly, pour over chicken. Place in preheated oven and cook for 45 minutes or until chicken is done.

Serve with rice and/or vegetables of choice.

Serves 5

Note: Fresh, Tinned or Dried Apricots may be added to the apricot chicken casserole for additional flavour and texture.
